Despite its name, honeycomb doesn’t contain honey. It’s so-called because its aerated appearance resembles the honeycomb created by bees. But in the case of cinder toffee or honeycomb candy, as it’s sometimes called, the bubbles are actually caused by the baking soda in the recipe. Honeycomb toffee is made by combining brown sugar with golden syrup and bicarbonate of soda, and doesn’t contain any animal products, so is not only delicious but also suitable for vegans!
