Lemon Gelato

Ingredients

  • 1kg of Colac Neutral White Base (SGC1006P)
  • 3kg Whole Milk
  • 300g Lemon Flavour Paste (SGF1808)

Method

This lemon gelato tastes like sunshine and conjures up images of strolling through a lemon grove on the Amalfi coast. Creamier and sweeter than a sorbet, but lighter than ice cream, this gelato will tempt fans of fresh and fruity flavours and is the ideal way to cool down on a hot summer's day.

How to Make Lemon Gelato:

  1. Heat the milk (70-85°c) 
  2. Add the Colac neutral gelato base and blend for 2+minutes 
  3. Allow to cool, add the lemon flavour paste and blend 
  4. Then churn, decorate and store as you would normally
