Ravifruit Raspberry Pate de Fruits

Ingredients

  • 1kg Ravifruit Raspberry Puree - SCF0865A
  • 30g Pectin - SCA132
  • 10g Citric acid
  • 10g water
  • 850g sugar

Method

Pate de Fruits can be a little intimidating at first, but with this step-by-step recipe, you'll have a plethora of pate de fruits flavours at your disposal! Using Ravifruit’s ambient fruit purées, it couldn’t be easier to create your own delicious fruity sweet treats.

How to Make Ravifruit Raspberry Pate de Fruits: 

Ingredients 

  • 1kg Ravifruit Raspberry Purée 
  • 30g Pectin 
  • 10g Citric Acid 
  • 10g Water 
  • 850g Sugar 

Method 

  1. Mix the sugar and yellow pectin together in a bowl until they are combined. 
  2. Pour the puree into a saucepan and then add the sugar. 
  3. Stir thoroughly and heat the mixture to 106*C. 
  4. Mix 10g of citric acid with 10g of water 
  5. Take the mixture off the heat and add the citric acid mixture; stir until fully combined. 
  6. Pour immediately into your chosen frame, give it a shake to settle and leave to set for 10 hours, but ideally overnight. 
  7. Optional decoration ideas include coating with sugar or dipping in chocolate. It is also worth noting that recipes will differ slightly due to varying water content of the purees.
