Around the World - Limoncello Truffles (Italy)

Ingredients

  • 280g Dark Sao Thome 70% Chocolate (SCC700)
  • 140g Dark Chocolate Splitters (SDS865)
  • 120g KerryMaid Whipping Cream Alternative (SCM280P)
  • 12g Lemon Zest
  • 52g Limoncello 70% Concentrated Alcohol (SCL185)

Method

Off we go to Italy for another tasting tour! These Limoncello truffles have just the right amount of lemon zest, giving them a real depth of flavour and texture.

How to Make Limoncello Truffles:

Makes 35-40 Hand Rolled Truffles

  1. Warm the cream in the microwave.
  2. Add the cream to the Sao Thome Origin dark chocolate and stir to form a nice ganache
  3. Then add the limoncello and lemon zest.
  4. Leave to set in the fridge (This may take up to 3 hours)
  5. Once set take out of the fridge, and with a teaspoon take enough ganache to make the required truffle size.
  6. Roll into a circle and coat the truffles in the Milk Chocolate Splitters
  7. Pop the truffles back in the fridge after rolling to set further
