Mango and Passion Fruit Gelato

Ingredients

  • 3kg Whole Milk
  • 260g Colac Passion Fruit Flavour Paste (SGC1814)
  • 340g Ravifruit Mango Purée (SCF0859A)
  • 1kg Colac Neutral White Base (SGC1006P)

The combination of creamy white gelato and mouth-watering fruit flavours will have your customers coming back all summer long. It's the perfect accompaniment to a summer pudding with lots of meringue and white chocolate!

How to Make Mango & Passion Fruit Gelato:

  1. Heat the milk (70-85°C) 
  2. Add the neutral gelato base mix and blend until smooth 
  3. Leave to cool for approximately 30 minutes 
  4. Add the mango purée and passion fruit flavour paste 
  5. Blend until combined 
  6. Leave to cool for approximately 30 minutes 
  7. Then churn, decorate and store as you would normally
