Cherry Ripple Gelato

Ingredients

  • 1kg of Colac Neutral White Base (SGC1006P)
  • 3kg of Whole Milk
  • 200g Cherry Flavour Paste* (SGF1802) *Plus extra for rippling

Method

Let this cherry ripple gelato recipe bring back the summer days of your youth with every spoonful. Quick and simple to make, it's a visually appealing and flavourful gelato that will go down a treat with customers.

How to Make Cherry Ripple Gelato:

  1. Heat the milk (70-85°c) 
  2. Add the Colac neutral gelato base and blend for 2+ minutes 
  3. Allow to cool and then divide the base mix in half 
  4. Add 200g of cherry flavour paste to one half of the mix and churn 
  5. Churn the other half of the mix without any flavouring 
  6. In another pan add the cherry gelato and milk gelato in large spoonfuls. Add some cherry paste and create a ripple effect.
