Cherry Gelato

Ingredients

  • 1kg of Colac Neutral White Base (SGC1006P)
  • 3kg Whole Milk
  • 360g Colac Cherry Flavour Paste (SGF1802)

Method

Cherries have the perfect balance of sweet and tart flavours, making them a clear choice for a delicious gelato flavour. You can dress this simple recipe up however you prefer with ripples, inclusions and decorations. Really go wild!

How to Make Cherry Gelato:

  1. Heat the milk (70-85°c) 
  2. Add the Colac neutral gelato base and blend for 2+ minutes 
  3. Allow to cool, add the cherry flavour paste and blend again 
  4. Then churn, decorate and store as you would normally 

Enjoyed this recipe? Mix through a sprinkle of freeze dried sour cherry slices, or for a little extra decadence, chop a few Griottines up and stir them through before storing.
